or in the south,people like hot pot very much and every region has its local features.For example,Sihuan hot pot is hot while Guangdong hot pot is famous for its fresh.Usually,there is a metal hot pot in the middle of table.When the soup in the pot is kept simmering,dishes are put into the pot.Beef,mutton,fish and vegetables are the main dishes.It is extremely popular in winter because it can keep the dishes warm all the time.And the atmosphere is hot,too.Friends or relatives sit down together to have a feast.It’s a good way to relax.
Hot pot - is the most famous and favorite dish in Chongqing. Chongqing local people consider the hot pot a local specialty, which is noted for its peppery and hot taste, scalding yet fresh and tender. People gather around a small pot boiled with charcoal, electric or gas filled with flavorful and nutritious soup base. You have a choice of spicy, pure and combo for the soup base. Thin sliced raw variety meat, fish, various bean curd products and all kinds of vegetables are boiled in the soup base. You then dip them in a little bowl of special sauce. Be careful since the spicy soup base is burning hot.
First eaten by poor boatmen of the Yangtze River in Chongqing area and then spread westwards to the rest of Sichuan. Now is a very popular local flavor and can be found at every corner of the city. There are a great variety of hotpots, including Yueyang Hotpot, Four Tastes Hotpot, Yashan Hotpot and Fish Head Hotpot. If you are adventurous enough, you can basically cook anything with hot pot, e.g., pigs brain and ducks kidney.
Chongqing people love their hotpot, especially when the weather is steamy. The fire dances under the pot, the heavily oiled and spiced soup boils with hazy steam, and the people are bathed in sweat. Although hotpot can be found wherever there are street vendors or small restaurants, chongqing Hot pot has the greatest variety and is known for its delicious soup base and dipping sauce.
The other famous local food is hot and spicy Mala Tang. Literally, "ma" means numbness in the mouth, "la" is chili hot and "tang" means piping hot. Mala Tang, with various raw ingredients cooked in a communal pot of steaming stock blended with spices, originated in Sichuans largest city, Chongqing. The double-sided soup pot, placed on a central table burner, is the focal point of the meal. Powerfully hot Mala Tang soup and fresh tasting chicken broth, side by side, are popular. Ingredients include fresh sliced abalone, sea cucumber, hog tendon, Beijing cabbage and beef dumpling, prawns, carp fish fillet, bean curd, chicken fillet and vegetables.
The excellent dipping mixture of sesame oil, chili sauce, peanut sauce, chopped chilies and garlic combine to make magic. Savory tidbits are appetizingly tasty - egg coated glutinous square, crispy spring roll, fried buns, eight treasure black rice and water chestnut jelly.
A Delicious Dish In this issue, two of our Chongqing colleagues introduce to us the Chongqing hotpot—known as one of Chongqing’s Three Treasures(the other two being the pretty girls and night-scene!).
Their favourite way of savouring this Sichuan speciality is to visit local hotpot restaurant that is popular with the locals and follows authentic recipes. The renowned spicy hotpot was originated in Chongqing and the most authentic one is to cooked with tripe, the end-result having a taste which is typically rich and oily. This traditional soup base is further enhanced with spicy bean paste, fermented soya beans, yak butter from Ganze, Sichuan,and Sichuan pepper(hua jiao),etc.
There are many kinds of ingredients, as the photos show, including sliced raw meat, seafood, vegetables, mushrooms or fungi, etc. Green tea is the perfect accompaniment to the hotpot, softening the impact of the more extreme spiciness. So, if you have a chance to visit Chongqing for business or travel, don’t miss out on tasting an authentic Chongqing hot and spicy hotpot while you’re there!

In the winter in the south of China, it is always very cold, and it‘s not like there’s heating in the north of China, so everyone seldom goes out. One advantage is that we can get together with our family, and our feelings will become more and more warm. In the winter, my family and I always get together to eat hot pot, which is my favorite food in the winter.
Hot pot makes our family feel very warm. We can put different materials and meat into the big pot to cook. It‘s hot and warm in our heart. Watching the TV in front of us and eating hot pot with our family, it’s such a warm picture. Hot pot has always been one of China‘s classic cuisines, and also attracted people from all over the world to come to China to taste hot pot. As a foreigner I don’t like spicy food very much, but don‘t mention how happy it is. It can not only enhance my feelings with my family, but also experience a hot summer in winter.
China’s food culture is broad and profound, and the cuisine is rich, so more foreigners come to China for development. The delicacy of Chinese food is recognized by the whole world. Hotpot is my favorite food in winter, which can make the atmosphere in the family more warm.
Every time when I go out with my friends for food, I will think about Hotpot first. Hotpot is my favorite food, I like the heat and the spicy taste. People always eat hotpot in winter, but for me, I will have it whenever I want. The reason why I like hotpot so much goes back when I was sick at the age of 8. At that time, I did not feel like eating anything, when I saw food, I wanted to spit. My parents worried about me so much. One day, when I walked on the street, I smelt the flavor, suddenly, I wanted to eat, I felt so hungry. I walked into the shop, people were eating the hotpot. My parents ordered the food for me, I ate a lot. Since then, I have the appetite. Hotpot becomes my favorite food.

老舅先放火锅料煮了一会儿,锅底煮开后,放进去年糕、豆芽、千张、骨肉相连、香肠等……,都是我喜欢吃的,最后,终于可以吃了,我觉得老舅烧的火锅比火锅店的还要好吃。
